We love making these soft style cookies and have adapted the BBC Good Food recipe we usually use to give them a Christmas twist. They taste just like Millies Cookies and are brilliant for lunchboxes, with a nice glass of milk during a Christmas film or even to give as a thoughtful Christmas gift.
Personally, I think they are ideal for leaving out for Santa on Christmas Eve. They taste so good and Santa will definitely appeciate them. The recipe is easy enough for kids to get involved with too.
This recipe makes 17 - 20 cookies.
Ingredients:
- 125g softened unsalted butter cut into cubes
- 100g light brown soft sugar
- 125g caster sugar
- 1 egg lightly beaten
- 1 tsp vanilla extract
- 225g self raising flour
- 1/2 tsp salt
- 2-3 bags 125g bags M&Ms (select the green, red and brown M&Ms only)
Method:
1 - Preheat the oven to 180C and line a baking tray with greaseproof paper
2 - Cream the butter and sugars together then stir in the beaten egg and vanilla essence
3 - Stir in the flour and salt and you should have a cookie dough
4 - Roll into walnut size pieces and place on your baking tray. Make sure there is plenty of space between the pieces as they will expand on cooking. Flatten slightly and decorate with your red, brown and green M&Ms (slightly push down into the cookie dough)
5 - Bake for around 10 minutes, remove from oven and allow to cool. If any of the edges are touching, gently score with a knife
6 - Once cooled, they will store in an airtight container for a few days. They are very hard to resist straigh from the oven though!
You could also decorate with icing and Christmas sprinkles
